We find this coffee to be really sweet. I mean REALLY sweet. It has some lovely subtle ripe fruit notes, but is still super clean and refined. This coffee also works amazingly well with milk. We don’t often say this, but we think we prefer this coffee white than black. Boom.

About This Coffee

As you’ll know by now, “The Classic” is all about quintessential flavours that make up the cornerstones of speciality coffee. It’s not about the crazy, the experimental or the challenging. A honey processed Costa Rican doesn’t necessarily fit the bill on paper, but believe us when we say, it does in your mouth.

While “honey processed” might sound a bit exotic, in context of Costa Rican coffee it’s a pretty standard processing method in this region. Let’s discuss.

Honey processing simply means that once ripe cherries are picked they are pulped (basically popping the seeds out) leaving the seeds covered in sticky mucilage which would normally be removed in fully washed coffee. With honey processing the entire seed with all the sticky stuff is placed on patios (or sometimes raised beds) to dry. As they dry in the sun the mucilage gets even stickier and ends up looking like honey, hence the name.

Honey processed coffees tend to have a really nice balance of being sweet, a little bit fruity, but still clean. This coffee is no exception. It’s been grown on the revered Las Lajas farm by coffee pioneers Francisca and Oscar Chacon. The farm has been producing coffee for over 80 years and leads the way in experimental processing in Costa Rica.
