About This Coffee

Right then, we’re going to try and tackle a topic currently circulating the speciality world. Have you clocked the processing method of this coffee? Anaerobic strawberry. Yep, we’re going there. Long story short, farmers and producers are currently experimenting with adding additional ingredients into fermentation tanks during processing. Let’s get one thing straight – we’re all for processing methods evolving and pushing the boundaries of taste in the cup. It’s exciting and progressive. What we’re not so cool with is when there’s a lack of transparency about what’s taken place during processing. There are some instances where things are added and the resulting flavour of the coffee is then passed off as terroir or naturally occurring notes. That’s not cool.

Now we’ve got that off our chest, we can tell you this coffee has undergone an extended fermentation with the addition of fresh strawberries. It’ll make sense when you taste it. Ripe cherries are carefully selected and then fermented in sealed barrels with strawberries for 10 hours. Why? Well, the sugars in the strawberries help fuel fermentation and add a delicious strawberry hit.
