About This Coffee

We need to talk about Carbonic Maceration. Sounds like some hipster way of making pickles or something. It’s not. It sounds a bit weird but it’s just one of many new-wave processing methods everyone is going mad for. Spoiler alert – Carbonic Maceration is basically the same as Anaerobic Fermentation. It’s a technique adapted from winemaking where cherries (either pulped or whole) are placed in a tank, Co2 is injected and then the tank is sealed for the duration of fermentation, 9 days in the case of this coffee. Once fermented the coffee is washed and dried for 11 days on raised beds.

This coffee is produced by The Coronel family who run an agroforestry system on their farm and strongly believe that healthy soil adapted to the plants is crucial for achieving a great cup quality. La Florida farm is said to have been a Spanish Hacienda (a large landed estate) back in colonial times and an indigenous settlement before that. The farm is surrounded by a biodiverse forest that is full of orchids, civets, armadillos, deer and pumas many of which are often seen on the farm.

We really love this coffee. You can expect notes of citrus and apple blossom with a tea-like body and floral undertones. As it cools, it turns into a super refreshing cloudy lemonade which is very pleasant. It’s ok with milk, but we would recommend drinking it black.
