Honduras probably isn’t the first country that comes to mind when you think of coffee. But Mario Mejia – the producer of this coffee wants to give Honduras a new name in the speciality scene. The future he imagines is one where Honduran coffee earns its own spot on the shelf. Rather than being blended away.
Mario chases higher quality every year. And not only for himself – he is part of the producer group, Conexh. Founded in 2021, the aim has been to form alliances with local producers, share their knowledge and provide the opportunity to sell higher quality coffee to a market that will pay better prices. Conexh also have their own drying station where they can dry multiple different farms' lots - experimenting with natural, pulped natural and extended fermentation processing, as well as the most popular in Honduras, washed.
This is a coffee that certainly deserves its own spot as one of our limited releases – not simply lost in a blend. It's a real delight to drink and it's incredibly delicate and sweet. There are subtle notes of yellow plum, honey and macadamia. This is a well-rounded and versatile coffee working when brewed black or with the addition of milk.
