STORY

We were blown away by this gem, so making it our first limited edition capsule run was a no-brainer. We sourced it from Cofinet’s Exotic lot – a selection of high-end, alternative-process coffees with rare varieties. Cofinet is a family business with over 80 years of experience growing and distributing fine Colombian coffee.

As growers and innovators, they focus on unique fermentation techniques at their farm and processing centre La Pradera, creating distinctive profiles that push the boundaries of Colombian coffee.

This coffee is grown by Sebastian Gomez, who comes from a traditional coffee family and continues the legacy of his father, a coffee farmer for over 30 years. When he’s not tending to his coffee, Sebastian enjoys time with his wife and baby. He loves skating and often spends time walking and skating with his baby in the park. Rad!

Our entire roastery team fell head over heels for this one. Expect a big bold kick of cranberry sauce upfront, followed by candied orange and a smooth finish of coconut rum. It’s sweet, juicy and has a sparkly mouthfeel. Add milk and it’s like serving up a slice of strawberry cheesecake.

BREWING

  1. Use fresh, ideally filtered water. Trust us, it makes a difference.
  2. Run a shot through the machine without a capsule to clean and warm up the brew chamber.
  3. Insert capsule and press the espresso, or short button. Our capsules have been designed to pour a little slower. This helps extract the most out of the coffee.
  4. Now you can get creative. Our capsules taste great on their own or paired with dairy or dairy alt milk, so go ahead and enjoy the way you want!

IS YOUR PACKAGING RECYCLABLE?

Our 200g and 1kg bags are made from recyclable LDPE (plastic #4). Check with your local authority for kerbside collection or recycle at major supermarkets. Our Nespresso-compatible aluminium capsules are also fully recyclable through household recycling or local collection points.

WHAT ROAST LEVELS ARE YOUR COFFEES?

We roast most coffee to an omni profile, which means it suits all brew methods while keeping the unique flavour of each coffee. The exceptions are The Truth, Uprising and The Bold. The Truth and Uprising are roasted for espresso, so they are more developed and soluble. The Bold is roasted darker to bring out richer characteristics alongside the coffee’s flavour.

WHAT GRIND SIZE DO YOU NEED?

Grind size can be tricky as adjusting it helps you get the best extraction. We know not everyone wants to invest in a grinder or fuss with settings. So we’ve simplified options with recommended brew methods:


Filter ground – cafetiere, pour-over filter and long brewed Aeropress
Espresso ground – short brewed Aeropress, moka pot and home espresso machines
